Ingredients:

  • 1/2 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 teaspoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1 fennel bulb, about 1 1/4 pounds
  • 1 1/2 teaspoons grated Parmesan cheese

Healthy Lemony Fennel Salad

To Prepare:

  1. Whisk the lemon zest, lemon juice, oil, salt, and 1 tablespoon water in a large bowl.
  2. Thinly slice the fennel bulb and add it to the bowl.
  3. Toss well.
  4. Sprinkle with Parmesan and toss again.
  5. Add to a serving bowl and enjoy.
