Quick Easy Snack Recipes with Fennel
Serving size = 4
Per Serving = 43.5 calories / 2.64 g fat / 4.82 g carbs / 1.14 g protein
Ingredients:
- 1/2 teaspoon lemon zest
- 2 tablespoons lemon juice
- 2 teaspoons extra-virgin olive oil
- 1/4 teaspoon salt
- 1 fennel bulb, about 1 1/4 pounds
- 1 1/2 teaspoons grated Parmesan cheese
To Prepare:
- Whisk the lemon zest, lemon juice, oil, salt, and 1 tablespoon water in a large bowl.
- Thinly slice the fennel bulb and add it to the bowl.
- Toss well.
- Sprinkle with Parmesan and toss again.
- Add to a serving bowl and enjoy.
