The Best Creamy Cucumber Salad

Serving size = 4

Ingredients:

  • 4 cups cucumbers, thinly sliced & seedless
  • 1 teaspoon of salt
  • 1/3 cup Low-fat yogurt
  • 2 tablespoons of rice wine vinegar
  • 2 tablespoons fresh dill, minced
  • Freshly ground black pepper, to taste
  • 1 cup red onions, thinly sliced

To Prepare:

  1. Thinly slice the cucumbers and toss in 1/2 teaspoon salt. Put the cucumbers in a colander and place in the sink or over a large bowl.
  2. Let stand for 30 minutes, stirring occasionally.
  3. Rinse and pat dry the cucumber slices. Discard the liquid.
  4. Add the cucumber slices, thinly sliced onions, low-fat yogurt, 2 tablespoons rice wine vinegar, 2 tablespoons minced fresh dill, and freshly ground black pepper to a medium-size bowl and toss to coat.
  5. Cover the bowl and chill for one hour. Enjoy the “Best Creamy Cucumber Salad” you’ve ever had before! 🙂
