The Best Creamy Cucumber Salad
Serving size = 4
44 calories per serving
Ingredients:
- 4 cups cucumbers, thinly sliced & seedless
- 1 teaspoon of salt
- 1/3 cup Low-fat yogurt
- 2 tablespoons of rice wine vinegar
- 2 tablespoons fresh dill, minced
- Freshly ground black pepper, to taste
- 1 cup red onions, thinly sliced
To Prepare:
- Thinly slice the cucumbers and toss in 1/2 teaspoon salt. Put the cucumbers in a colander and place in the sink or over a large bowl.
- Let stand for 30 minutes, stirring occasionally.
- Rinse and pat dry the cucumber slices. Discard the liquid.
- Add the cucumber slices, thinly sliced onions, low-fat yogurt, 2 tablespoons rice wine vinegar, 2 tablespoons minced fresh dill, and freshly ground black pepper to a medium-size bowl and toss to coat.
- Cover the bowl and chill for one hour. Enjoy the “Best Creamy Cucumber Salad” you’ve ever had before! 🙂
