If you love mushrooms as much as I do, both of the recipes I will share here would make an easy stuffed mushroom appetizer.
Imagine garlic, thyme, rosemary, and Parmesan coming from your oven as these little guys bake. YUMMY! Delicious!
They taste as good as they smell and are low in calories, carbs, and fat!
Easy Stuffed Mushroom Appetizer #1
“Roasted Garlic & Butter Mushrooms”
Serving size = 4
Per Serving = 16 calories / 0 g fat / 3.2 g carbs / 1.6 g protein
Ingredients:
- 16 mushrooms – Baby Bella mushrooms work great
- 6 tablespoons butter (melted)
- 6 cloves garlic – (I use 2 teaspoons minced garlic)
- 2 teaspoons fresh thyme or 3 teaspoons ground
- 2 teaspoons fresh rosemary or 3 teaspoons dry (I highly recommend the fresh because dry rosemary tends to be hard similar to rice and is not pleasant to be in the mouth)
To Prepare:
- Preheat the oven to 400 degrees
- Gently wash the mushrooms and remove the stems.
- Line a cookie sheet with foil and spray with olive oil.
- Place the mushroom caps approximately 1 inch apart and lightly salt them.
For the garlic & herb mixture:
- In a small bowl combine the melted butter, garlic, thyme, and rosemary.
- Stir to combine.
- Melt the butter and using a small basting brush, brush some melted butter over each mushroom cap.
- Stuff each mushroom with the garlic and herbs mixture.
- Brush the remaining butter over the tops of each mushroom.
- Bake the mushrooms for 20-30 minutes in a preheated oven. (you want them to be golden brown and tender)
- When they are brown, tender, and bubbly, remove the pan from the oven and allow cooling for a few minutes.
- Serve as an appetizer, side dish, or snack between meals.

Easy Stuffed Mushroom Appetizer #2
“Seafood Stuffed Mushrooms with Crab Meat”
Serving size = 4
Per serving (5-6 mushrooms) = 160 calories / 11 g fat / 5.5 g carbs / 9 g protein
Ingredients:
- 1 large package of baby Bella whole mushrooms
- 2 tablespoons finely grated Parmesan cheese
- 1 tablespoon chopped fresh parsley (or 2-3 tbsp dried)
Stuffing Mixture:
- 4 ounces cream cheese, softened
- 4 ounces crab meat, finely chopped (Imitation crab meat works fine)
- 6 teaspoons minced garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 teaspoon paprika
To Prepare:
- Preheat the oven to 400 degrees.
- Line a cookie sheet with foil and spray with olive oil.
- Gently wash the mushrooms and remove stems.
- Place the mushroom caps on the foil lined cookie sheet approximately 1 inch apart.
- Salt each mushroom cap.
For Stuffing Mixture:
- In a medium size bowl, combine all the filling ingredients and stir until well-mixed without lumps.
- Stuff each mushroom cap evenly with the mixture.
- Sprinkle with Parmesan cheese and parsley.
- Bake uncovered in preheated oven for about 30 minutes (until golden brown and tender)
- Serve as an appetizer, side dish, or snack between meals.
